Almost Summer Strawberry Soup
2 qts. Fresh Strawberries
1/2 cup sugar
2 cup water
1/4 cup fresh orange juice
1 cup yogurt
pinch nutmeg
Grated rind of 1 orange
Grated rind of 1 lemon
Whipped cream for garnish
Fresh Mint
1 Cup Toasted Pound Cake Cubes
Wash and hull berries. Puree in blender or use steel knife of food processor. Set aside. Combine sugar and water in medium sized saucepan. Boil for 10 minutes to make sugar syrup. Cool. Add strawberry puree to syrup. Add orange juice, fresh mint, nutmeg and grated citrus rind. Add yogurt.Stir well. Cover and chill several hours. Serve in chilled wine glasses or espresso cups! Garnish with cubes of toasted pound cake and, if desired, a dollop whipped cream. Serves 8 to 10.
Jasper suggests adding sweet wine or apple juice in place of water for added flavor!
