Fresh Blueberries and Jasmine Tea Anglaise
1 Pint Hen House Blueberries
1 Molly B's Pound Cake (Toasted Slices)
Fresh Mint
Tea Anglaise Sauce
1 cup half and half cream
2 tbsp of Jasmine Dragon Ball Green Tea
2 egg yolks
3 tablespoons sugar
½ teaspoon vanilla extract

Place the Jasmine Dragon Ball tea leaves loose in a small saucepan, add cream and simmer gently for 6 minutes. Strain out the tea leaves pushing on the leaves with the back of a spoon to get out every drop of this tea. Whisk egg yolks with sugar and vanilla extract. Slowly add tea infused cream to egg mixture. Return cream mixture to saucepan and cook over medium heat for about 4 minutes. Chill for 20-30 min.

To serve, spoon a pool of chilled Jasmine Tea Anglaise in the center of a plate, add toasted Molly B's Pound Cake and fresh Hen House Blueberries. Top with more sauce and fresh mint
