Chinese Orange Beef
1 lb. Flank Steak, pounded thin & cut into 1/4 inch-thick slices
2 tb peanut oil
1 tb cornstarch
1 tb light-brown sugar
1 ts orange rind, grated
1/2 ts ground ginger
4 tb soy sauce
red chili peppers
1 cup orange juice
2 Hen House oranges, peeled & chopped
Saute flank steak slices in peanut oil 3-4 minutes. In a separate frying pan or wok, whisk cornstarch, brown sugar, orange rind, ginger, soy sauce and orange juice together. Cook over medium heat, stirring to thicken. Boil 1 minute. Stir in cooked beef. Add fresh oranges and red chili peppers (optional), cook over medium heat, stirring occasionally, until hot.
Serves 4
Jasper's notes: A classic Chinese dish, Orange Beef can be the perfect dinner for a cold winter night! Add broccoli, sprouts, and snow peas for added flavor and serve on a bed of egg noodles or steamed rice. DELICIOUS orange flavor, simple and quick preparation!
