Greek Lemon Chicken
1 Cup Garlic Expressions*
1/2 tablespoon chopped fresh oregano
2 lemons, juiced
1 whole Hen House Chicken, cut into pieces

In a large glass bown, mix the Garlic Expressions with the oregano and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator for a few hours. Preheat grill for high heat. Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear. Smaller pieces will not take as long. Baste with more Garlic Expressions and serve with additional lemon squeezed on top of finished chicken.

Jasper's Notes: *Garlic Expressions is available at Hen House Markets and is a great marinade or dressing for beef, poultry, seafood and salad greens. I like to serve this dish with sliced tomatoes and feta cheese with more Garlic Expressions drizzled on top along with some roasted potatoes!
