Kansas City Strip Steaks With Balsamic Ketchup
2 Hen House Kansas City Strips
Garlic Salt and Fresh Cracked Pepper
Farm To Market Ciabatta Bread
Lightly salt and pepper Hen House Kansas City Strip Steaks. Prepare the grill, when the charcoal is ready, add cherry wood chunks (cooking indirect w/ drip pan) sear both sides of the strip then place in the middle of the grill and cook/smoke to med.rare. Off the grill , cut the steak in thin slices and serve on toasted Ciabatta w/ drizzled Balsamic Ketchup. Great for parties!
6-8 Hen House Vine Ripened Tomatoes
1/2 cup finely minced onion
1 Tabl. Balsamic Vinegar
2 Tabl. Brown Sugar
Salt & Pepper to taste
1/2 Clove Garlic Minced
Wash, core and cut 6-8 tomatoes into quarters. Saute in sauce pan 10-15 min. In another saucepan, cook sugar (stirring constantly) over med. heat until it turns deep brown. Add the onion and garlic.; cook for 5 min. Add tomatoes, balsamic, salt and pepper and bring to a boil. Reduce heat to low and simmer, stirring occasionally, until thick (about 15 min.). Cool. Puree on food processor and chill.
Jasper's Notes: Looking back to the eighteenth century, ketchup started out as a sauce made of anchovies, walnuts, mushrooms and kidney beans. The word ketchup is derived from the koechiap or ke-tsiap which is from the Amoy dialect of China. Roughly translated means the brine of pickled fish. Around the late seventeenth century the name and samples arrived in England where it appeared in print as catchup and then finally as ketchup.
