Local Honey Roasted Free Range Chicken
1/2 cup EV olive oil
1/4 cup Balsamic vinegar
1/2 cup Good Natured Family Farm's Honey
3/4 tsp cinnamon, ground
1 Free Range Chickens (Aprox 3-3.5 lbs)
20 cloves fresh garlic
Fresh Tarragon
Salt & Pepper
Combine olive oil, vinegar, honey and cinnamon in a small heavy saucepan. While stirring constantly, simmer until mixture thickens slightly, about three minutes. Remove glaze from heat. Brush chicken with glaze. Salt and pepper hens generously. Add chicken, fresh tarragon and garlic to roasting pan. Roast in a preheated 400 degree oven until thigh juices run clear when pierced, about 45 to 50 minutes. Baste every 10 minutes. Remove chicken from oven. Carve. Just before serving, place roasting dish over moderate heat and reheat sauce and garlic cloves. Serve chicken with garlic and pan juices.
Jasper's notes: The exceptional flavor of this local free range chicken makes all the difference when you taste this easy recipe with a simple glaze. I also add some fresh potato quarters to the pan while roasting. Serve chilled leftover chicken over local greens and tomatoes with a balsamic vinaigrette for a fresh summer salad!
