Milk Braised Roasted Pork
2 1/2 pound Boneless Hen House Simply Natural Pork Roast
2 Tabl. Olive Oil
2 cups Good Natured Family Farm's Local Milk
Salt & Pepper to taste
Season Simply Natural Pork Roast with salt and pepper. In a 4-quart roasting pan, heat oil over moderately high heat & brown pork roast on all sides, about 5 minutes total. Add milk and cover with foil or roasting pan lid. Heat in a 350 degree oven for around 2 hours, turning and basting with pan liquids.
Transfer pork to a cutting board and let stand 5 minutes. Season cooking liquid generously with salt and pepper and boil in roasting pan on medium to high heat until slightly thickened, about 2 - 3 minutes. Ladle on top of sliced pork.
Jasper's Notes: This recipe is a classic Italian preparation for roasted pork. In this simple recipe the pork acquires a delicate texture and flavor and the milk slowly evolves into a rich sauce of golden curds. I like to use fresh rosemary when roasting. Don't be put off by the porks homely appearance, the flavor is unbelievable!
