Old Fashioned Fish 'N' Chips
4 Hen House Market Tilapia Fillets
Juice of ½ lemon
salt and freshly ground pepper
Oil for deep frying
2 Sweet Potatoes, sliced thin for chips
BEER BATTER
2 large egg yolks
½ cup Boulevard Pale Ale
½ cup flour
½ tsp. salt
½ tsp. baking powder
Cut fish fillets into 2" pieces. Place in a bowl with lemon juice, salt and pepper. Place potato slices in a bowl of chilled water.
Heat oil to 350 for deep frying. Dip pieces of fish individually into batter, and then into hot oil. Repeat the same process with sweet potatoes. Cook, turning and submerging fish and chips in the oil until golden brown all over.
Drain on paper towels.
Serve with malted vinegar for added flavor!
Jasper's Notes: Fish 'n' chips, is a popular take away with British origins. Joseph Malin opened the first recorded fish-and-chip shop in London in 1860. For added authenticity, wrap cooked fish and chips in wax paper and overwrap in newspaper for a great presentation!
