Crusted Orange Roughy
2 eggs
cracked black pepper to taste
1 pound Orange Roughy fillet
1 cup Parmesan, grated
2 tablespoons olive oil
1 Tablespoon Butter
1 lemon, cut into wedges
Beat the egg lightly black pepper. Dust Orange Roughy with flour. Dip fish fillets with the beaten egg, draining off excess. Roll the fillets in the Parmesan to coat.
Heat the olive oil and butter in a large skillet over medium-high heat until hot but not smoking. Add the fillets and cook until browned on one side, about 2 minutes. Turn the fillets over and brown the other side. Serve with lemon wedges.
Roasted Pepper Sauce
4 Oz Roasted Red Peppers
4 Tablespoons Mayonnaise
1 Teaspoon. horseradish
1/2 lemon
4 dashes Tabasco Pepper Sauce
Salt and pepper to taste
Place all ingredients into a blender and mix. Chill and serve on the side with Orange Roughly
