* although we try to be as accurate as possible with all nutritional data, some of the ingredient data may be slightly higher or lower due to data availability. Did not have chianti or blue bell in database, so used generic red wine and ice cream.
Peaches & Chianti
6-8 Fresh Hen House Market Peaches
2 cups Chianti Wine
3/5 cup sugar
1 Cinnamon stick
6-8 cloves
2 Tabl. Orange Rind
1 Qt Blue Bell Vanilla Ice Cream
or
Dannon Vanilla Yogurt
Wash the peaches carefully and put them in a small pan. Add red wine until the peaches are half covered. Add sugar. Simmer the peaches 3-4 minutes. Take out the peaches and slip off the skins. Cut into eights and place in mixing bowl. Add warm red wine and sugar mixture. Toss with orange rind, cinnamon stick and cloves. Refrigerate 2-3 hours. Serve over Blue Bell Vanilla Ice Cream or Dannon Yogurt.
Jasper's Notes: This recipe is very dear to my family. My father made this EVERY HOLIDAY and this was one of the desserts served at my wedding! Simple & delicious, just in time for the good old summertime.
