Penne alla Vodka con Asparago
1 Lb. penne cooked pasta
1/4 cup butter
1/2 cup vodka
1/2 teaspoon crushed red pepper flakes
4 Hen House Markets Hot House Tomatoes (cored and diced)
5-6 Fresh Hen House Markets Asparagus spears (diced)
1 1/2 cup heavy cream
Fresh basil leaves
3/4 cup grated Parmigiano Reggiano Cheese
Melt butter in large skillet over medium heat. add chopped tomatoes and saute about five minutes. Add asparagus and stir in vodka and red pepper flakes. Increase heat to high and add heavy cream and basil. Reduce heat to medium high, stirring for 5 minutes, or until sauce thickens. Add grated cheese until blended. Toss with cooked pasta until evenly coated.
Jasper's Notes: Do not worry about tasting the vodka since all of it evaporates in cooking but you are left with a peppery flavor that come through. Many flavored vodkas are available, and it can be fun experimenting with them. I like to flambe the pasta at the end with more vodka for show! Your family and friends will think you slaved for hours to create this sauce. Mangi Bene!
