Salmon Teriyaki Stir Fry
1 lb Fresh Wild Alaskan Coho Salmon fillets, skinless & cut into strips
1 tsp flour
1 tbsp minced ginger
1 tbsp dark soy sauce
1 tbsp Teriyaki sauce
2 tbsp sunflower oil
1 tabl. Fresh Orange peel (minced)
1 bunch spring onions, sliced diagonally
7 oz carrots, cut into strips
1 yellow pepper, sliced
1 red pepper, sliced
Mix together the flour, ginger and soy sauce with 3 tablespoons cold water. Heat the oil in a wok or large frying pan until hot, add the spring onions, orange peel and ginger and cook for 30 seconds. Add the carrots and pepper and stir fry for 3 - 4 minutes. Add the salmon and Teriyaki sauce, cook for 3 – 4 minutes. Add the sauce, stir and cook until it thickens and salmon is fully cooked.
Jasper's Notes: Teriyaki's history actually comes from the city of Seattle, which begins, possibly, as early as 1908 in the city's Nihonbashi district but which really took off with the opening of Toshi's Teriyaki in 1976—a time of great Asian influx into the Seattle area and one that saw diners searching for healthier fare and Asian flavors—creating the perfect nexus for the teriyaki explosion.

Salmon Thai Cobb Salad
1 Cup Fresh Pre Stir Fried Wild Alaskan Coho Salmon Filet Pieces
3 Slices Bacon (cooked crisp & crumbled)
Hard Boiled eggs (chopped)
1 Red or Green Bell pepper (seeded and chopped)
1/4 Cup red onion (chopped)
1/2 Cup Crumbled Gorgonzola Cheese
4 Cups Mixed Field Greens
1/2 Cup Minced Skinless Peanuts
2-3 Tabl. Thai Salad Dressing
Arrange lettuce on a platter. Top with salmon, bacon, bell pepper, red onion, chopped eggs, peanuts and Gorgonzola. Top with Thai salad dressing.
Jasper's Notes: Here is a great way to use yesterday's salmon, just crumble the salmon and prepare this easy salad. Be creative, use different cheeses and lettuces and salad dressings, it's your dish to take to another level!
