Shrimp Panini In A Pan
Shrimp With Lemon & Olive Oil Soaked Ciabatta Bread
1 pound Fresh Hen House Shrimp, shelled and deveined
Shrimp With Lemon & Olive Oil Soaked Ciabatta Bread
1/2 cup olive oil
1/2 cup fresh lemon juice
Salt & pepper to taste
3 teasp fresh Oregano (Chopped)
2 tablespoons butter
1 clove garlic, finely minced
1/2 cup Dry White Wine
2 Cups Ciabatta Bread (torn into 1 inch pieces)
1 tablespoon finely chopped green onion tops
Fresh Parsley to taste (Chopped)
Melt butter in large skillet; add minced garlic, green onions and shrimp. Stir-fry shrimp over medium heat until pink. Reduce pan with lemon juice and white wine. Season with salt, pepper and oregano. Add torn Ciabatta bread and olive oil. Toss together and let bread soak up olive oil and remaining juices. Let bread get crisp on edges. Add more lemon and white wine as desired. Toss with fresh parsley & serve immediately.
